Adventures in Vegan Baking

So, this past week my culinary goal was to create a delicious vegan cupcake. I had been researching recipes via various blogs and forums for the perfect pastry. Basically, I needed something simple but tasty enough to stand out against my past dairy- infused confections. After drooling over several options, I ended up choosing Moosewood's Vegan Chocolate Cake recipe. Reviews of the recipe praised the ease of preparation and deliciousness of the final product. Sweet (pun definitely intended)! I was sold.

Attempt one: EPIC FAIL. I thought I would be really cool and adjust the recipe. You know, because I have plenty of experience in vegan baking and all. I substituted agave nectar for sugar and as a result the other liquid ingredient proportions were altered (incorrectly... math whiz I am not). Also, I'm pretty positive I left the cupcakes in the oven way too long. Cool. Nonetheless, they looked fabulous! I made some icing and crumbled some Newman O's on top to add a little texture.

Once finished, I put them in a tin and went home to feed my culinary 'guinea pigs' (aka my wonderful family). 'Twas quite hilarious actually. My little bro took a bite and his face changed from anticipated pleasure to sheer disgust. As he spat it out he turned to me and said, "That has to be the third most disgusting thing I have ever tasted!". I did not bother to ask what claimed the top two spots. Intrigued, I decided to take a bite. John was not kidding. I mean, they weren't horrible but something was definitely off- too dry and bland. Not gonna lie, there was an odd odor as well. Final conclusion: I got an A+ for presentation, F for taste and I was left with a hunger to get back in the kitchen and make some revisions.

Today, I concocted a second batch. This time I stuck with the original recipe, reduced oven temperature, as well as overall baking time. End result: to be decided by the fam although I did taste some of the 'crumblies' that stuck to the pan and I gotta say- I think it's a vast improvement!!

I'm looking forward to experimenting more with vegan baking. This cake recipe was a great starter step. Even though the first attempt was a failure, it taught me to only improvise on a recipe after you feel you have mastered it. Side note: It's really nice to have the option to eat my final product unlike my previous vegan-unfriendly recipes!

A challenge for the day : Switch one of your typical daily meals today to a vegan-friendly one. Breakfast is an easy place to start (think fruits, oats, whole grains, etc ). There are plenty of yummy recipes out there just waiting to be taste-tested!
